Waiter, there's something in my stuffed pineapple!

Today I was cooking my lunch when suddenly I remembered this great blog event "Waiter there's something in my..." and I decided to take a picture of my lunch and post about it!
This recipe is called "Empedrat" in Catalonia, and usually consists in a salad of salted cod with white beans and other stuff. I've made some changes to the traditional "empedrat" inspired by a catalan Chef: Ismael Prados (he's our little "Jamie";-))
Here's the recipe for two people! Enjoy!



Ingredients

half a pineapple
a small can of white beans
some gravlax
some caviar substitute
a handful mixed salad leaves
some chopped fresh herbs
pepper and olive oil

Methode

Remove the pulp from your pineapple. Chop the pulp and the gravlax and mix it in a bowl with the beans, herbs and oil.
Put at the bottom of the pineapple half some salad leaves. Cover the leaves with the bean-pineapple-salmon mixture.
You can top it with a little caviar substitute.

It's very fresh, healthy, beautiful and tasty!
